When sending a sign request, there is a "Signing Order" option.
You can select "All at once" or "One at a time", as seen in send sign request figure above.
One at a time (Default):
Only one person can sign the document at a time.
All at once:
Everyone can sign the document as soon as the sign request is created.
The order of signers is designated by number and position of the signers as they are listed in the request. This order can be changed by dragging signers up or down in the list using the 'signer order handler' as shown in the image above.
You can set the Signing Order Default for all new Sign Requests in your Sign Request Settings at https://dochub.com/settings/sign-requests.
It's not possible to edit this setting after a Sign Request is sent, so if you need to change it after sending, you would need to make a copy of it and sent is as a new Sign Request. See this article for more information: Editing a Sign Request after it's been sent

Is there a way to change from one at a time to all at once AFTER a document is sent to be signed?
I have the same question. Or could we set the default to be "sign at once" so we don't have to remember to switch it every time?
Has there been an answer to whether you can change this setting after the signature request went out? Would be a really helpful feature.
Not that I know of. So I am just really careful to make sure that everyone can sign it at once.
Is there a way to add two potential signers, and either one of them can sign it, but only one signer is required?
